Ancient Technique

We’re introducing the Turkish coffeepot to our daily routine. This black enamel jug offers a very traditional way to brew coffee. This might be the oldest method of making coffee in the world. Originating in the Ottoman Empire during the 16th century, this method doesn’t use any filtering. Instead, the grounds are settling at the bottom of the cup.

Method

First, add water, finely ground coffee, and sugar (if you like it) to the pot. Heat it slowly on the stovetop, allowing it to come to a gentle boil. Skim off the foam before it overflows, then let it settle and repeat the process once more. Finally, pour the coffee slowly into cups, allowing the grounds to settle at the bottom.
